Our wines don’t follow trends – they express their origin, the people who craft them, and the way of life we experience here.

Minimalism & Intuition
What begins in the vineyard is carried through with the same dedication in the cellar. The grapes are hand-harvested, gently pressed, and vinified in small, site-specific lots.
To capture the essence of the terroir as authentically as possible, we rely on skin contact, minimal settling by natural sedimentation, spontaneous fermentation, and extended lees aging.
Courage & New Paths
Depending on the character of each individual parcel, the wines undergo spontaneous fermentation in small or large oak barrels, stainless steel, or concrete eggs.
They remain untouched on the full lees until just before bottling.
The result: timeless, characterful wines that express their origin.

From our elegant estate wines to our uncompromising single-vineyard bottlings, every bottle carries its provenance, the unique signature of the vintage, and our personal touch.

Estate Wines
Our estate wines are the introduction to our winery – and our calling card.
They are made from grapes grown in various vineyard sites surrounding the estate and stand for varietal typicity, freshness, and pure drinking pleasure.
These wines are approachable and ideal for everyday enjoyment – the perfect way to discover our quality and style.
Village Wines
Our village wines reflect the unique character of Eibelstadt’s terroir.
They come from vines over 30 years old, grown on the partly steep slopes along the banks of the Main River.
More refined and structured than our estate wines, they are defined by finesse and minerality.


Single-Vineyard Wines
Our single-vineyard wines represent the top of our range and showcase the full potential of our outstanding sites, such as the Eibelstadter Kapellenberg and the Eibelstadter Mönchsleite.
With great dedication and meticulous manual work, we cultivate the steep slopes—some with gradients of up to 65%—and harvest only the smallest yields.
In the cellar, the wines are matured in oak barrels or concrete eggs. They are defined by finesse, complexity, depth, and excellent aging potential.

Discover Our Wines
Clear, polished, and rather cool nose with delicate vegetal notes and yellow fruit aromas reminiscent of pome fruit, subtle smokiness, and hints of mushrooms, seaweed, and nutty nuances.
Ripe, juicy fruit on the palate with good concentration; smoky and nutty oak tones; fine, lively acidity and grip from mellow tannins.
Persistent on the palate with subtle vegetal notes, a touch of pepper and minerality; compact structure with power and substance, some depth.
Still undeveloped, with background notes of capers and maritime hints.
Very good, firm, and slightly austere finish. Needs time to mature.Our recommendation: the 2023 Eibelstadter Mönchsleite Silvaner.
Aromatic nose with intense yellow fruit and a touch of papaya that continues more subtly on the palate.
Creamy texture thanks to well-judged oak use, and a wonderful length with a salty finish.
